Like Potato Chips? Make Them Yourself!

Your secret’s out: we know you like potato chips more than pretzels! A recent facebook poll yesterday gave CSR the overwhelming ‘chip preference’ response from our fan and followers. Here’s a fast, easy, and yummy recipe to make your favorite sandwich side at home. Enjoy!

Potato Chips
Makes about 4 servings
Ingredients:
1/4 cup olive oil
2 large baking potatoes (1 pound total), scrubbed
3/4 teaspoon coarse salt
1 teaspoon coarsely ground black pepper
Method:
1. Preheat oven to 375°F.
2. Brush 2 large baking pans, fitted with silpats, generously with some olive oil. Cut potatoes crosswise into 1/16-inch-thick slices with a mandolin slicer and immediately arrange in 1 layer on baking sheets. Lightly brush slices with more oil and sprinkle with half of coarse salt and pepper.
3. Bake until golden, 10 to 20 minutes (check frequently after 10 minutes), and transfer as cooked with a metal spatula to a rack to cool.
